Zucchini and Feta Slices

Egg and zucchini slices filled with feta cheese and plenty of fresh herbs!
ingredients
- 2 cups zucchini, shredded and squeezed to drain
- 1/2 cup onion, diced (or 1 leek, sliced)
- 4 green onions, sliced
- 2 tablespoons dill, chopped (or 2 teaspoons dried dill)
- 2 tablespoons mint, chopped (or 2 teaspoons dried mint)
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 cup all-purpose flour (gluten-free for gluten-free)
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 5 eggs
- 1/4 cup olive oil
directions
- Mix the zucchini, onion, green onions, dill, mint, feta, and mozzarella.
- Mix the flour, baking powder, salt, and pepper and then mix it into the zucchini mixture.
- Mix the eggs and oil and then mix it into the zucchini mixture.
- Pour the mixture into a gread (or foil lined) 8×8 inch baking pan and bake in a preheated 350F/180C oven for 40-45 minutes; a toothpick pushed into the center should come out clean when done.
- Let cool, slice and enjoy!
Option: Add 2 tablespoons parsley, chopped.
Option: For the fresh herbs, use any combination of dill, mint, and parsley.
Option: Use gruyere instead of mozzarella.
