Creamy garlic pasta recipe

Ingredients

300g tagliatelle (any long pasta will work)

20g salted butter

Six garlic cloves finely chopped

Two tbsp plain flour

150ml chicken stock

200ml double cream

85g parmesan grated

20g flat-leaf parsley roughly chopped

Method

Start by cooking the pasta according to the instructions on the package. While the pasta cooks, heat butter in your largest skillet over medium heat.

Once the butter begins to foam, add minced garlic and freshly ground black pepper, about 25 turns of the mill. Sauté for four to five minutes, until the garlic becomes lightly golden and releases a fragrant aroma.

Add the flour to the pan, stirring it in to create a smooth paste. Cook for one to two minutes, then gradually whisk in the chicken stock, ensuring the mixture becomes a silky sauce. Stir in the heavy cream and most of the parmesan cheese.

Continue mixing until everything is fully melted and well incorporated. Taste the sauce and adjust the seasoning as desired.

Immediately add the cooked pasta to the pan, along with a generous splash of the pasta cooking water. Stir well, adding more cooking water if necessary, until the sauce reaches a rich, creamy consistency.

Divide the pasta and sauce evenly among four bowls, then sprinkle with the remaining parmesan cheese and chopped parsley before serving.
